Patriotic Cake πΊπΈ Hope y'all had an awesome 4th of July with family and friends! To celebrate, I whipped up this delicious vegan cake to share with my crew. Change the toppings, and youβve got a cake for any occasion. Give it a try and let me know what you think! |
Ingredients |
Vanilla Cake |
1 1/3 cups almond milk, unsweetened
1 tablespoon apple cider vinegar
1/3 cup canola oil or melted coconut oil
1 cup sugar (I like coconut sugar)
2 teaspoons pure vanilla extract
2 1/4 cups all-purpose flour (I used almond flour)
1 tablespoon baking powder
1/2 teaspoon salt

Vegan Cream Cheese Frosting |
1 container of vegan cream cheese (1 cup)
1/2 cup vegan butter, softened at room temperature (I used Earth Balance)
2 tablespoons of liquid sweetener
1/3 cup brown sugar (I used the sweeteners that I had in the pantry!)

Instructions |
For the Vanilla Cake: |
Preheat the oven to 350 degrees and lightly grease a cake pan.
In a large bowl, whisk together the almond milk and vinegar. Let sit for 1 minute to curdle. Then add the oil, sugar, and vanilla. Whisk to combine.
Measure the flour and add it on top of the wet mixture. Sprinkle on the baking powder and salt. Mix with a wooden spoon until the batter is smooth.
Pour the batter into the prepared cake pan. Bake for about 30 minutes, or until a fork comes out clean and the cake is just a little golden on top.
I pour on the frosting right when it comes out of the oven for a strawberry shortcake vibe. You could also let the cake cool and use a thicker frosting or even whipped cream for a topping.

For the Vegan Cream Cheese Frosting: |
In the same bowl you used for the cake, add the softened vegan butter and vegan cream cheese. Mix until creamy, smooth, and well combined. I don't have a mixer (LOL), so I mixed by hand. Definitely recommend using a mixer.
Add the sugar until thick and spreadable and to the amount of sweetness you like. Store in the fridge until you are ready to frost the cake.

Be specific and action oriented. Give yourself a measurable deadline. Then, make appointments with yourself that mark progress towards your goal - like a boss.
Forward is forward. Plateaus are inevitable. Champions just keep showing up.
Stay active while you travel. Once you indulge the excuses, they spiral. Something is better than nothing. Download the Peloton app and keep moving.
Stop looking for a shortcut. Do the work. There will never be a sale on hustle.

Answer: Fueling your body right is extremely important for feeling strong during your workouts. It's all about finding what works for you and what your body can handle while you're moving.
I like the rule of halvesβhalf of your meal or snack before the workout and half after, so you're starting with something that's smaller than a hefty meal. My go-to's? A protein bagel with almond butter, coconut yogurt with fruit, tofu scramble with veggies, or a plant-based smoothie with water, greens, protein, and berries!
